Chef shares berry learnings at Invitational Academy

Derek Seigfried, food expert with Gordon Foodservice and a 2022 California Giant Berry Farms Chef Invitational winner, recently delved deeper into blueberry-inspired culinary creativity at California Giant Berry Farms' Chef Invitational Academy.

Through visits to blueberry farms, Seigfried gained a profound appreciation for the hard work and dedication involved in cultivating the fruit. From small, family-owned farms to large-scale commercial operations, he witnessed the entire blueberry production process.

"Seeing the passion behind every blueberry has deepened my respect for this versatile fruit and the work that goes into delivering a quality product," said Seigfried. "California Giant Berry Farms is providing the foodservice industry with ingredients that inspire creativity and elevate culinary experiences."

Beyond the field tours, the immersive event included a workshop led by Chef Rosalyn Darling for past Top Chef winners, including Seigfried. The workshop focused on food styling, food photography, and crafting a compelling personal mission statement.

The workshop offered Seigfried an opportunity to refine his skills in food presentation and photography while connecting with fellow culinary professionals. By collaborating and exchanging ideas with other Top Chef winners, Seigfried fostered a sense of camaraderie and inspiration within the culinary community.

During the workshop, Seigfried showcased his culinary artistry by styling his Blueberry Duck Laab. This dish, featuring sautéed minced duck breast, fresh blueberries, toasted rice powder, chilies, and aromatics with a blueberry and green peppercorn sauce, was served with lettuce cups and cucumber.

To complement the savory flavors, Seigfried paired the dish with a lemongrass, kaffir lime, and galangal-infused frozen blueberry margarita. By carefully arranging the components and capturing the dish's vibrant colors, Seigfried transformed his Blueberry Duck Laab into a visually stunning masterpiece that showcased his culinary creativity and attention to detail.

Seigfried firmly believes that incorporating fresh blueberries into a menu can add value and versatility to culinary applications. Blueberries, with their color, sweet and tangy flavor, and nutritional benefits, offer a refreshing addition to a variety of dishes. Whether used in savory or sweet preparations, blueberries can elevate the taste, texture, and visual appeal of a menu item. Seigfried's Blueberry Duck Laab is just one example of how blueberries can be creatively incorporated into a sophisticated and flavorful dish.
