“Frozen mushrooms are gaining ground on the fresh mushroom format even in the harvest season”

"There's some uncertainty about Europe's wild mushroom campaign because of the abnormal weather conditions in autumn. Mushrooms are highly sensitive to external conditions and cycles, and they've been having uneven harvests for years. However, it is still a highly appreciated food. Its consumption transcends the fresh segment and is moving in a very interesting way to the frozen format."

The growth in the consumption of frozen mushrooms is indisputable; moreover, for years it has been gaining ground in the fresh market even in the fresh product's harvest season,” stated Isaac Petràs, from Bolets Petràs. “The frozen mushroom is available year-round and minimizes the irregularities that the fresh supply has. In addition, ultra-freezing allows the mushrooms to maintain their texture and flavor, as well as 100% of their organoleptic and nutritional properties.” Bolets Petràs' new facilities in the municipality of Olesa, which will be opened in a few days, will enhance this segment.

“Our company was established in 1985 and three generations of the Petràs family have worked in it. We started with a small store in the market of La Boqueria and little by little grew. In 2007 we set up the first industrial warehouses in Olesa and in 2014 we acquired another warehouse that allowed us to use the initial warehouse for fresh products and the new one for the frozen line. Now, we're announcing our latest expansion."

“We've acquired two more warehouses that will increase our surface by nearly 1,000 meters. We are going to dedicate half of this area to a freezing warehouse with a capacity for 800 pallets, equivalent to about 420,000 kilos of frozen mushrooms. The facilities also have an automated line capable of processing 2,400 kilos of mushrooms per hour and loading docks. Once we launch it next week, we'll be able to operate and serve all our customers.”

“The great advantage of these new freezing facilities is that all the space occupied by the frozen product in the previous warehouses is now free, which allows us to quadruple our capacity in fresh, quintuple the capacity of the dry product, and multiply our capacity in frozen by 20.”

The expansion of space has also given Bolets Petràs greater freedom to elaborate and create products. “In fact, we have many novelties planned,” Isaac stated. “We have products and compositions that we previously couldn't do, as well as customized and personalized work for each client. In addition, we're going to expand the two blends we've been marketing so far to seven, and we'll have much more affordable and smaller formats: we'll move from 2 kg bags to 1 kg bags, and from 10 kg (5x2) boxes to 5-6 kg boxes.”

“We have extra-superior-quality wild and cultivated 100% European mushrooms. The value of our mushrooms characterizes and differentiates us. The new blends, new packaging formats, and storage capacity will make us even more competitive.”
