"In the retail sector, the receptiveness to new mushroom products has changed positively in recent years"

Currently, the company Bayer. Pilze & Waldfrüchte Uwe Niklas Ltd is in the middle of the morel season, Lisa Niklas tells us. "The quality is very good, and there are good volumes available. We offer the morels in different sizes: For example, there are select small morels, medium-fall or extra large for stuffings. Additionally, at the moment there are St. George's mushrooms, fairy ring mushrooms and the first chanterelles from the Balkans are already available."

High demand, longer season
"The demand for morels is good. Morels are in high demand, especially in upscale restaurants and among gourmets, so the target group is very specific. We serve catering suppliers, C&C markets, as well as wholesale markets with it. It is important that the morel reaches the consumer quickly, because the shelf life is limited. It should also be kept refrigerated throughout. The product really thrives on freshness," she said.

Volumes are about the same as last year, she said, with the 2022 season almost at an end by this time. "That means the season is going longer this year. The quality is consistently very good this year is and also continuously available in good quantities. We offer the morels in 1.0 kg boxes. Due to the fact that morels are a rather high-priced item, the product is also in high demand in the 400 gr tray."

Less fresh product as far as chanterelles go
"Since the Corona crisis and the Russia-Ukraine war, we have been processing more frozen and dried mushrooms. This is partly due to the shelf life of the products and partly due to the fact that there is less fresh product available for chanterelles because the supply countries Russia and Belarus are no longer available. Demand for other mushroom varieties, such as king trumpet mushrooms, shii-take mushrooms or enoki mushrooms, is continuous. However, especially in the retail sector, the receptiveness to new mushroom products has changed positively in recent years."
