Agata potato

Chef reveals secret to winning French fry recipe

Alexandre Laigo, crowned champion at the French Fries World Championships in Arras, attributes his winning fries to the Agata potato, a waxy variety with a pale yellow skin. Fried in beef fat, these potatoes helped Laigo win the "most authentic chips" category, delighting over 50,000 fry enthusiasts. His restaurant, Badem Concept Tartare in Angers, is expected to see a surge in popularity following his victory, much like last year's winner.
