Belgian mushroom wholesaler adds Golden Ear mushrooms to its range

Belgian mushroom wholesaler, FME, has a new item in its assortment - Golden Ear mushrooms (Tremella Aurantia). "These mushrooms are mainly consumed in Asia, particularly in China. They're exported from there to the rest of the world," begins FME's Luc van den Aker. "It's widely used in soups and stews."

"These mushrooms pair well with many things. These include not only garlic, ginger, spring onions, thyme, coriander, and carrots. But also peppers, tofu, pork belly, poultry, fish, sesame oil, soy sauce, and vinegar. Golden Ear mushrooms can be supplied year-round."

"This variety is cultivated in the Yunnan province in China," Luc explains. "They're small to medium with an average diameter of 5-10cm. They also stemless and made up of clusters. The Golden Ear is yellow to bright orange. When dried, it takes on a golden, matte finish that becomes brittle. It resembles an orange cauliflower."

In the fridge, the fresh mushrooms can last a week. They must be stored loosely in a paper bag. In dried form, you can keep them for up to three months in an airtight container. "It's also a very healthy product. Golden Ear mushrooms are a good source of potassium, iron, and calcium. They also contain trace elements like manganese. In short, it's a wonderful product to use in the kitchen," Luc concludes.
