The first avocado mayonnaise is already a reality. Paltavo, the company from Malaga, will present its Avonesa (avocado mayonnaise) at the next edition of Fruit Attraction, which will be held in Madrid from October 5 to the 7. This sauce is made from natural ingredients. It is egg-free, gluten-free, and lactose-free, and it will be marketed in different formats with a mild and spicy variant suitable for vegetarians and vegans and for an audience that values fresh and healthy food.
The company's products are made with the natural HPP (High-Pressure Processing) method, a cold food processing technique based on the application of high levels of hydrostatic pressure transmitted by water that maintains the flavors and nutrients of the products. Luis Bravo, who has more than 20 years of experience working in different companies, is in charge of the project
The company will take advantage of Fruit Attraction to showcase the rest of its product portfolio to its customers and distributors: mild guacamole and spicy guacamole.
The differential value of this sauce is that it has pieces of pulp, so its texture is very similar to that of homemade guacamole.
Paltavo will showcase and launch its products at the Fruit Attraction fair. The company will be located at stand F05 in pavilion 10 of IFEMA.
Paltavo is owned by TrÓpico Spain (Exceltrop), an avocado producer and marketer that is also located in Malaga's Axarquia. TrÓpico Spain was created in 2011 and closed 2020 with a turnover of 58 million euro.
