Eggers Gemüsehof refines part of the harvest into sauces, pesto and salt

"We're very excited to see how this will be received"

The Eggers vegetable farm from Ochsenwerder has part of its harvest refined into sauces, pesto and salt. The vegetable farm is launching a total of 13 products on the market. "We're very excited to see how this will be received," Arne Eggers tells the Abendblatt. He hopes the new products will extend the season even further into winter, also building a broader customer base.

That's because sales by Hamburg's largest tomato grower, which sells its harvest to wholesale market traders and Hamburg weekly market traders and supplies Rewe markets, have roughly halved in 2022, Eggers explains. But the ripe fruit that could not be sold fresh should not be disposed of under any circumstances. "That would be the worst-case scenario," says Arne Eggers. So about eight tons were frozen, extending their shelf life. The produce is now being boiled down and refined into juice and sauces.
