Uvella, raisings from Mazzarrone

Raisins obtained from the best seedless selections

Sicilian grapes from Mazzarrone enters the processed fruit sector with Uvella, the raisins produced with seedless grapes, the first of their kind produced entirely in Italy. This was possible after four years of research and experimentations conducted in collaboration with the University of Palermo (Saaf).

Those who think that only produce unsuitable for the fresh produce market is used to make raisins are very wrong! Only the most prestigious seedless grapes are used in this case, selected grape by grape at least twice. They are grapes for which Co.Ra (the producer) holds licenses and which have been grown in the Mazzarone area for years.

Uvella was created to produce raisins as a high-end niche product, which probably has not even existed up until now. So much so that it was greatly appreciated during a test where it was entered as an ingredient for the Panettone World Championship (whose final took place on October 14 2023 in Milan). Uvella was in fact the only raising used by all the teams thanks to a previous pre-selection event. Teams of master bakers from France, Italy, Spain, Argentina, Germany, Japan, Poland and Taiwan took part.

Appreciated by different sectors
Uvella is the brand that represents a company that makes raisins by processing fresh seedless grapes. Thanks to a dehydration process developed with the help of important researches, Uvella is a top-level product appreciated by different sectors and especially by high-end patisserie, as we have seen. The dedication of the company for high-quality artisanal product is testified by the strict processing, which makes this product a new point of reference for cuisine and patisserie lovers, i.e. for all those looking for ingredients with organoleptic qualities and flavor well above the products imported from other regions of the world so far.

Production process in a short video

"While, on a production level, we have achieved our goal with great satisfaction as we immediately became part of an international competition, we need to further develop our skills on a commercial level. The championship represented a double victory for us, as not only was Uvella chosen as ingredient, but also because the Italian team led by Claudio Gatti, our testimonial, took the first place at the Panettone World Championship 2023".

"We do have an advantage when it comes to distribution thanks to our extensive experience in the fresh produce sector. We have already received requests from both Italy and abroad, but we need to define a marketing and communication strategy that goes beyond the national border. We can meet all kinds of specific requests, but we need to develop the packaging and weights more suitable for every circumstance. In addition, we do not want to just work in the H&R segment, but to actually open up to the main markets for raisins. Finally, we would like to thanks Confapi Sicilia and Coop Somnium, in addition to master baker Claudio Gatti."
