On average, Spain produces 414,000 tons of carrots a year. Andalusia is the autonomous community with the highest production. Cadiz is the largest producing province with 185,200 tons cultivated on over 3,000 hectares.
Other important producers are Castilla y León with provinces such as Valladolid and Segovia, the Valencian Community, especially in Villena, Alicante, and Castilla La-Mancha.
Carrot cultivation dates back more than two thousand years and originated in Asia. It is one of the most produced vegetables in the world. Carrots have been highly valued since ancient Greece. Global production is led by Europe, Asia, and the United States.
Andalusia's carrot production is mainly focused on the international market and the packaging companies are also producers, especially in times of high prices. More than 80% of the production is consumed fresh, the rest goes to the industry for processing to make frozen products, canned goods, dried products, and baby food, among other things. Approximately 20% of total production is exported.
