"Flesh firmness measuring tools are essential for companies"

Measuring flesh firmness is one of the most important parameters to determine the shelf-life of a fruit and vegetable product. Even with the arrival on the market of non-destructive technologies for determining fruit ripeness, this type of measurement remains entrusted to tools that have been used for many years, such as penetrometers and hardness testers.

This parameter is usually measured by means of a penetrometer, which measures the force required to penetrate the inside of a fruit with a tip. This tool is widely used for tropical fruits such as mangoes and avocados, as well as for apples, pears, peaches, nectarines, and kiwifruits.

"For blueberries, cherries, tomatoes, and table grapes, which do not have the right characteristics to be measured with a penetrometer, tools such as hardness testers, which are used to determine the firmness/elasticity of the flesh, have been on the market for some years now. For these fruits, the firmness of the flesh is an important indicator of quality, also because most consumers appreciate crispness at the moment of consumption," says Enrico Turoni of TR Turoni.

Hardness testers simulate the pressure of a finger on the flesh without breaking or penetrating it and provide the corresponding value. This technology does not have to be expensive and complicated: sometimes easy-to-use tools can help in everyday work. Both penetrometers and digital hardness tester allow for quick and easy measurement and control of flesh firmness, from harvest to point of sale.
