Demand is expected to be strong for fresh herbs for Easter and two other spring events: the Kentucky Derby on May 3, an event that sees greater mint demand, and Cinco de Mayo, which sees a boost in cilantro demand. Meanwhile, Easter tends to see a pickup in demand for fresh herbs such as rosemary, thyme, parsley, dill, and chives.
As for the supply of herbs, they are plentiful. "We have a busy few weeks ahead, and the pull will start late this week, but strategically, we have extra plantings all the time," says Philipp Harlov, VP sales and marketing for Infinite Herbs. "We grow more than we need in case one region is experiencing weather-related issues or customers suddenly need extra product."

Growing regions
Those plantings are from multiple growing regions in the U.S., which include New Jersey and Florida. Outside of the U.S., Infinite grows in both Colombia and Mexico. The company has operations in Chicago, New Jersey, Boston, and Miami, with GFSI-certified packing facilities.

(The latter will debut in about four to six weeks.) "We've been around for 22 years, and so it was time for a refresh to reflect our growth while modernizing our image," says Harlov.
It is also introducing a new organic paste line of herbs inside a squeezable pouch. The line will include six varieties: pesto, basil, cilantro, parsley, ginger, and garlic. "We should have these available in the next four weeks to ship," adds Harlov.
