Mexico is the world's third-largest producer of asparagus. In 2020, Mexico produced a total of 301,000 tons of asparagus, i.e. 10.4% more than in the previous year. According to data from the Agrifood and Fisheries Information Service (SIAP), in 2017 Mexico produced 246,000 tons and in 2018 it increased its production to 278,000 tons. In 2019 production decreased slightly and totaled 272,000 tons. Last year, production grew again.
The main producing entities in the country are Sonora, Guanajuato, Baja California Sur, and Baja California, which together concentrate 80.4% of the national harvested volume. The rest of the national production is harvested in the states of Queretaro, Michoacan, Coahuila, Sinaloa, Aguascalientes, Durango, Tlaxcala, Jalisco, San Luis Potosi, Mexico, and Hidalgo.
This crop is harvested throughout the whole year. However, production peaks between December and April, as more than 70% of the offer available in the country is obtained in these months.
The main destinations for the Mexican asparagus in 2020 were the United States, Spain, Chile, Japan, Belize, the United Kingdom, Panama, Hong Kong, and the United Arab Emirates, among other countries.
Annual per capita consumption in Mexico is 0.8 kilograms and asparagus account for 1.8% of the country's vegetable production.
