Research confirms mayonnaise helps ease vegetable consumption for the elderly

Kewpie Corporation, in collaboration with Wayo Women's University, confirmed that adding mayonnaise or emulsified dressings significantly improves the ease of eating vegetables and other difficult foods, especially for the elderly with reduced bite strength. The study, presented at the 35th General Meeting of the Japanese Society for Mastication Science, showed that emulsified condiments help clump food together, making it smoother and easier to swallow. This finding is particularly beneficial for those with declining eating abilities due to age, potentially helping to prevent issues like malnutrition and aspiration pneumonia.
