Potibon, the alternative to butter made of 80% French vegetables

In 2023, Lyse Aubry, an engineer from Verdun, created Potibon, a fat-free alternative to butter made from 80% French vegetables (in particular, pumpkin and butternut).

© Potibon The ingredients of Potibon are: Pumpkin, Butternut, Maize, Chicory, Oats, Salt, and Citric Acid. Keep in a cool place before and after opening, between 0°C and 6°C, for 7 to 10 days.

This innovation, which can be used as a spread or in pastries, won 1st prize in the What's on tomorrow's menu? start-up competition (2nd edition) organized by FoodTech Dijon Bourgogne-Franche-Comté and supported by Vitagora. It is due to go on the market this year.
